For the Bread: 2 cups all-purpose flour 2 medium apples diced (about 2 cups) 3/4 cup brown sugar light or dark 2 large eggs room temperature 1/2 cup vegetable oil 1/4 cup milk 1 teaspoon vanilla extract 1 teaspoon baking soda 1/2 teaspoon salt 1 tablespoon ground cinnamon For the Pecan Crunch Topping: 1 cup pecans chopped & toasted 1/4 cup brown sugar 2 tablespoons flour 2 tablespoons melted butter 1 teaspoon cinnamon
Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
Prepare Ingredients: Dice apples into small cubes and toast pecans until fragrant.
Mix Dry Ingredients: In a large bowl, whisk together flour, cinnamon, baking soda, and salt.
