For the Shortbread Base:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 3/4 cup cold unsalted butter cubed
For the Apple Filling:
- 4 cups apples Granny Smith & Honeycrisp, peeled & sliced
- 1/3 cup granulated sugar
- 2 tbsp lemon juice
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground cloves
For the Crumb Topping:
- 1 cup all-purpose flour
- 1/2 cup brown sugar packed
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup cold unsalted butter cubed
- 1/2 cup rolled oats
- 1/4 cup chopped walnuts or pecans optional
Prep Baking Dish
Preheat oven to 350°F (175°C).
Line a 9x13-inch pan with parchment paper, leaving overhang for easy removal.
Lightly grease exposed areas of the pan.
Make Shortbread Base
Mix flour, sugar, and salt in a bowl.
Cut in cold butter until mixture resembles coarse crumbs.
Press into the pan and bake for 15-18 minutes until edges are slightly golden.
Prepare Apple Filling
Toss apples with lemon juice.
Mix in sugar, flour, cinnamon, nutmeg, and cloves.
Let sit for 5-10 minutes.
Make Crumb Topping
Combine flour, brown sugar, cinnamon, and salt.
Cut in butter until crumbly.
Stir in oats and nuts. Refrigerate if warm.
Assemble & Bake
Spread apple filling over warm crust.
Sprinkle crumb topping evenly over apples.
Bake for 40-45 minutes until golden and bubbling.
