Ingredients
  

For the Shortbread Base:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 3/4 cup cold unsalted butter cubed

For the Apple Filling:

  • 4 cups apples Granny Smith & Honeycrisp, peeled & sliced
  • 1/3 cup granulated sugar
  • 2 tbsp lemon juice
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves

For the Crumb Topping:

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup cold unsalted butter cubed
  • 1/2 cup rolled oats
  • 1/4 cup chopped walnuts or pecans optional

Instructions
 

Prep Baking Dish

  • Preheat oven to 350°F (175°C).
  • Line a 9x13-inch pan with parchment paper, leaving overhang for easy removal.
  • Lightly grease exposed areas of the pan.

Make Shortbread Base

  • Mix flour, sugar, and salt in a bowl.
  • Cut in cold butter until mixture resembles coarse crumbs.
  • Press into the pan and bake for 15-18 minutes until edges are slightly golden.

Prepare Apple Filling

  • Toss apples with lemon juice.
  • Mix in sugar, flour, cinnamon, nutmeg, and cloves.
  • Let sit for 5-10 minutes.
  • Make Crumb Topping
  • Combine flour, brown sugar, cinnamon, and salt.
  • Cut in butter until crumbly.
  • Stir in oats and nuts. Refrigerate if warm.

Assemble & Bake

  • Spread apple filling over warm crust.
  • Sprinkle crumb topping evenly over apples.
  • Bake for 40-45 minutes until golden and bubbling.

Cool & Slice

  • Cool in pan for 2 hours.
  • Lift out using parchment, slice into bars, and enjoy!

Notes

  • Use a mix of tart and sweet apples for the best flavor. 🍏
  • For extra crunch, toast the nuts before adding.
  • Refrigerate bars for cleaner cuts.
  • Serve warm with ice cream or drizzle with caramel for a decadent twist.
