Ingredients
  

For the Chicken Marinade:

  • 2 lbs boneless skinless chicken thighs
  • 1/4 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 4 cloves garlic minced
  • 2 tbsp Greek yogurt
  • 2 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper

For the Tzatziki Sauce:

  • 1 1/2 cups Greek yogurt
  • 1 medium cucumber grated and drained
  • 2 cloves garlic finely minced
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh dill chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Assembly:

  • 4-6 pita breads
  • 1 large tomato sliced
  • 1 small red onion thinly sliced
  • 1 cucumber sliced
  • 1/2 cup feta cheese crumbled (optional)
  • Fresh lettuce or mixed greens
  • Extra olive oil and lemon wedges for serving

Instructions
 

Step 1: Prepare the Chicken Marinade

  • Whisk together olive oil, lemon juice, minced garlic, Greek yogurt, and spices in a large bowl.
  • Add chicken thighs and coat well.
  • Cover and marinate for at least 2 hours (preferably 4-6 hours or overnight).

Step 2: Make the Tzatziki Sauce

  • Grate the cucumber, remove excess water.
  • Mix with Greek yogurt, garlic, olive oil, lemon juice, dill, salt, and pepper.
  • Refrigerate for at least 30 minutes before serving.

Step 3: Cook the Chicken

  • Heat a grill or skillet over medium-high heat.
  • Cook chicken for 5-7 minutes per side until golden and cooked through (165°F internal temperature).
  • Rest for 5-10 minutes, then slice into strips.

Step 4: Warm the Pita Bread

  • Brush pita with olive oil and heat for 15-20 seconds per side.

Step 5: Assemble the Gyros

  • Spread tzatziki on pita.
  • Add sliced chicken, tomatoes, red onion, cucumber, feta, and lettuce.
  • Drizzle with olive oil and lemon juice.
  • Wrap and serve!

Notes

  • Marinate chicken overnight for the best flavor.
  • Make tzatziki a few hours ahead for deeper taste.
  • Store leftovers separately to keep ingredients fresh.
  • Use grilled halloumi or marinated tofu for a vegetarian option.
