- 1 tbsp dried thyme
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
For the Tzatziki Sauce:
- 1 1/2 cups Greek yogurt
- 1 medium cucumber grated and drained
- 2 cloves garlic finely minced
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 2 tbsp fresh dill chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
For Assembly:
- 4-6 pita breads
- 1 large tomato sliced
- 1 small red onion thinly sliced
- 1 cucumber sliced
- 1/2 cup feta cheese crumbled (optional)
- Fresh lettuce or mixed greens
- Extra olive oil and lemon wedges for serving
Step 1: Prepare the Chicken Marinade
Whisk together olive oil, lemon juice, minced garlic, Greek yogurt, and spices in a large bowl.
Add chicken thighs and coat well.
Cover and marinate for at least 2 hours (preferably 4-6 hours or overnight).
Step 2: Make the Tzatziki Sauce
Grate the cucumber, remove excess water.
Mix with Greek yogurt, garlic, olive oil, lemon juice, dill, salt, and pepper.
Refrigerate for at least 30 minutes before serving.

Rest for 5-10 minutes, then slice into strips.
