For the Burritos:
- 8 large flour tortillas burrito-size
- 12 large eggs
- 8 slices thick-cut bacon
- 1½ cups shredded cheddar cheese
- 3 tablespoons butter or olive oil
- ¼ cup milk or heavy cream
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Optional Fillings:
- 1 bell pepper diced
- 1 small onion finely diced
- 1 cup baby spinach chopped
- ¼ cup fresh cilantro chopped
- 1 avocado sliced
Step 1: Cook the Bacon
Lay bacon slices in a cold skillet and heat to medium.
Cook 8-10 minutes, turning occasionally, until crispy.
Drain on paper towels, then chop into bite-sized pieces.
Step 2: Sauté the Vegetables (Optional)
Use 1 tablespoon of reserved bacon fat in the pan.
Sauté bell pepper and onion over medium heat for 5-7 minutes.
Add spinach in the last 30 seconds to wilt.
Step 3: Prepare the Eggs
Whisk eggs with milk/cream, salt, and pepper.
Heat butter or oil in a skillet over medium-low.
Pour eggs in and gently push from edges to center to form curds.
Remove from heat when slightly glossy.
Stir in chopped bacon, sautéed veggies, and 1 cup shredded cheese.
Step 4: Assemble the Burritos
Warm tortillas in microwave for 10-15 seconds.
Place egg mixture slightly below center of each tortilla.
Add avocado, cilantro, and remaining cheese if desired.
Fold in sides, roll tightly, and tuck edges.
