Bacon Sandwich with Caramelized Onions

For the Caramelized Onions:
- 2 large yellow onions thinly sliced
- 2 tbsp unsalted butter
- 1 tbsp vegetable oil
- 1 tsp brown sugar optional
- 1 tbsp balsamic vinegar
- Salt and freshly ground black pepper to taste
For the Bacon:
- 8 slices thick-cut bacon
- 1 tsp fresh thyme leaves optional
For Assembly:
- 8 slices artisanal sourdough bread
- 4 tbsp mayonnaise
- 2 tbsp whole grain mustard
- 2 cups fresh arugula
- 4 slices aged cheddar cheese optional
Caramelize the Onions
Slice onions into even half-moons.
In a skillet, heat butter and oil over medium-low. Add onions and salt.
Stir and cook for 5 minutes, then reduce heat to low.
Stir every 5–7 minutes for 35–45 minutes until deep golden and jammy.
In final 5 mins, stir in brown sugar (optional) and balsamic vinegar. Season.
Cook the Bacon
Place bacon in a cold skillet. Turn heat to medium-low.
Cook 7–10 mins, flipping until crispy but slightly flexible.
Drain on paper towels. Sprinkle thyme on top if using.
Toast the Bread
Toast sourdough slices until golden and crisp but still tender inside.
Assemble the Sandwiches
Spread mayo and mustard on each slice.
Layer arugula, caramelized onions, 2 bacon slices, and cheese (if using).
Add final onions, then top with second bread slice (mustard side in).
Press gently and cut diagonally to serve.
