  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp olive oil

Lemon Butter Sauce:

  • 1/2 cup unsalted butter melted
  • 4 large lemons 2 juiced, 2 sliced
  • 4 cloves garlic minced
  • 2 tbsp fresh thyme leaves
  • 2 tbsp fresh parsley chopped
  • Zest of 1 lemon

Optional Flavor Boosters:

  • Red pepper flakes
  • Fresh rosemary sprigs
  • Capers
  • Dry white wine

Instructions
 

1️⃣ Chicken Preparation

  • Pat chicken thighs completely dry with paper towels for crispy skin.
  • Season with salt and pepper on all sides.

2️⃣ Make the Lemon Butter Sauce

  • In a bowl, whisk together melted butter, minced garlic, lemon juice, lemon zest, and fresh herbs.
  • Adjust seasoning to taste – it should be bold and tangy.

3️⃣ Assemble the Dish

  • Place chicken skin-side up in a large baking dish.
  • Tuck lemon slices around the chicken.
  • Pour butter sauce evenly over the top.

4️⃣ Bake to Perfection

  • Preheat oven to 425°F (218°C).
  • Bake for 35-40 minutes, until skin is crispy and internal temp reaches 165°F.
  • If the skin browns too fast, tent loosely with foil.

5️⃣ Rest & Serve

  • Let the chicken rest for 5-10 minutes before serving.
  • Spoon extra sauce over the top and garnish with fresh herbs.
