Bananas Foster Banana Bread

For the Banana Bread Base:
- 3 very ripe bananas about 1½ cups mashed

- 1 teaspoon baking soda

- 2 large eggs
- 2 teaspoons vanilla extract
- ½ cup sour cream
- 2 tablespoons dark rum
For the Bananas Foster Topping:
- 3 firm bananas sliced
- ½ cup unsalted butter
- 1 cup dark brown sugar
- ¼ cup dark rum
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg
Making the Perfect Base
Preheat oven to 350°F (175°C).
Line a 9x5-inch loaf pan with parchment paper.
In a bowl, whisk together flour, baking soda, and salt.
In another bowl, cream butter and sugar until light and fluffy.
Beat in eggs one at a time.
Fold in mashed bananas, sour cream, and vanilla extract.
Gradually add dry ingredients, mixing until just combined.
Stir in rum last, being careful not to overmix.
Pour batter into prepared loaf pan.
Bake for 60-65 minutes, until a tester inserted comes out clean.
Allow to cool completely before adding topping.
Creating the Bananas Foster Topping:
Melt butter in a heavy skillet over medium heat.
Stir in brown sugar, cinnamon, and nutmeg; cook until bubbly.
Add sliced bananas carefully, coating them in caramel sauce.
Pour in rum and allow it to reduce, stirring gently.
Remove from heat when sauce thickens.
Assembly:
Once the banana bread has cooled, pour the warm Bananas Foster topping over the loaf.
Slice and serve immediately for the best flavor.
