Ingredients
  

For the Banana Bread Base:

  • 3 very ripe bananas about 1½ cups mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup dark brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup sour cream
  • 2 tablespoons dark rum

For the Bananas Foster Topping:

  • 3 firm bananas sliced
  • ½ cup unsalted butter
  • 1 cup dark brown sugar
  • ¼ cup dark rum
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg

Instructions
 

Making the Perfect Base

  • Preheat oven to 350°F (175°C).
  • Line a 9x5-inch loaf pan with parchment paper.
  • In a bowl, whisk together flour, baking soda, and salt.
  • In another bowl, cream butter and sugar until light and fluffy.
  • Beat in eggs one at a time.
  • Fold in mashed bananas, sour cream, and vanilla extract.
  • Gradually add dry ingredients, mixing until just combined.
  • Stir in rum last, being careful not to overmix.
  • Pour batter into prepared loaf pan.
  • Bake for 60-65 minutes, until a tester inserted comes out clean.
  • Allow to cool completely before adding topping.

Creating the Bananas Foster Topping:

  • Melt butter in a heavy skillet over medium heat.
  • Stir in brown sugar, cinnamon, and nutmeg; cook until bubbly.
  • Add sliced bananas carefully, coating them in caramel sauce.
  • Pour in rum and allow it to reduce, stirring gently.
  • Remove from heat when sauce thickens.

Assembly:

  • Once the banana bread has cooled, pour the warm Bananas Foster topping over the loaf.
  • Slice and serve immediately for the best flavor.

  • Store banana bread (without topping) at room temperature for up to 3 days.
  • Make the Foster topping fresh before serving.
  • Warm individual slices before adding the topping.
