Prepare the Beef: Slice the beef thinly against the grain. Coat with cornstarch and soy sauce. Let it marinate for at least 5 minutes (up to 1 hour or overnight for extra tenderness).
Make the Sauce: In a bowl, whisk together soy sauce, oyster sauce, rice wine vinegar, balsamic vinegar, and brown sugar. Set aside.
Cook the Beef: Heat a wok or large skillet over high heat. Add 1 tablespoon of oil and stir-fry the beef for 2–3 minutes until browned. Remove and set aside.
