For the Filling:
- 8 large eggs
- 6 strips bacon cooked and crumbled (or turkey bacon, ham, chorizo)
- 1 cup shredded cheddar cheese or Monterey Jack, pepper jack
- ¼ cup green onions sliced
- ¼ cup diced red bell pepper
- 2 tablespoons fresh cilantro chopped (or parsley)
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon cumin
For Assembly:
- 12-14 small flour tortillas 6-inch
- 2 tablespoons olive oil or melted butter or avocado oil spray
For Serving (Optional):
- Avocado slices or guacamole
- Salsa
- Sour cream
- Hot sauce
- Lime wedges
Step 1: Prepare the Egg Mixture
Whisk eggs in a bowl, then add garlic powder, salt, pepper, and cumin.
Step 2: Cook the Eggs
Heat a non-stick skillet, add oil/butter, and pour in the eggs.
Scramble until just set, then remove from heat.
Step 3: Create the Filling
Let eggs cool slightly, then mix in bacon, cheese, onions, bell pepper, and cilantro.
Step 4: Assemble the Taquitos
Preheat oven to 400°F (200°C).
Warm tortillas for flexibility.
Place 3 tablespoons of filling in each tortilla, roll tightly, and place seam-side down on a baking sheet.
