Ingredients
  

For the Fritter Base:

  • 2 cups finely chopped broccoli florets
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Optional Additions:

  • 2 tablespoons fresh herbs parsley, dill, or chives
  • 1/4 cup finely diced onion
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon lemon zest

For Serving:

  • Greek yogurt or sour cream
  • Lemon wedges
  • Fresh herbs for garnish

Instructions
 

Prepare the Broccoli:

  • Finely chop broccoli using a food processor or knife.
  • Microwave with 1 tablespoon water for 1 minute to steam.
  • Drain and press dry with a clean towel.

Mix the Batter:

  • Beat the egg in a large bowl.
  • Add broccoli, flour, Parmesan, garlic, salt, pepper, and optional add-ins.
  • Stir to combine, letting it rest for 5 minutes.

Form and Cook:

  • Heat olive oil in a large skillet over medium heat.
  • Form patties using 2 tablespoons of mixture each.
  • Fry 3-4 minutes per side until golden and crisp.

Serve:

  • Drain on paper towels.
  • Serve with Greek yogurt or sour cream, lemon wedges, and herbs.

Notes

  • For gluten-free fritters, substitute with rice flour or a gluten-free blend.
  • Dairy-free? Use nutritional yeast instead of Parmesan.
  • To store, refrigerate for up to 3 days or freeze for up to 2 months.
  • Reheat in a skillet or oven for crispy results.
