For the Fritter Base:
- 2 cups finely chopped broccoli florets
- 1 large egg
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 clove garlic minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons olive oil for frying
Optional Additions:
- 2 tablespoons fresh herbs parsley, dill, or chives
- 1/4 cup finely diced onion
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon lemon zest
For Serving:
- Greek yogurt or sour cream
- Lemon wedges

Prepare the Broccoli:
Finely chop broccoli using a food processor or knife.
Microwave with 1 tablespoon water for 1 minute to steam.
Drain and press dry with a clean towel.
Mix the Batter:
Beat the egg in a large bowl.
Add broccoli, flour, Parmesan, garlic, salt, pepper, and optional add-ins.
Stir to combine, letting it rest for 5 minutes.
Form and Cook:
Heat olive oil in a large skillet over medium heat.
Form patties using 2 tablespoons of mixture each.
Fry 3-4 minutes per side until golden and crisp.
