  • 2 large everything bagels locally baked preferred
  • 4-6 slices thick-cut bacon artisan, small-batch
  • 1 large ripe California Hass avocado
  • 1 medium heirloom tomato farmer’s market fresh
  • 1 cup chopped crisp lettuce organic, local greens
  • 2 large free-range eggs
  • 2-3 tablespoons mayonnaise homemade or organic

Instructions
 

Prepare Ingredients:

  • Toast the bagels until golden brown.
  • Cook bacon low and slow until crispy, then drain excess fat.

Chop & Mix:

  • Dice the bagel into bite-sized pieces.
  • Chop the bacon, avocado, tomato, and lettuce into even portions.
  • In a large bowl, mix all chopped ingredients.

Prepare the Eggs:

  • Cook eggs to your preference (soft scramble, poached, or fried).
  • Slice or chop and gently fold into the mix.

Assemble the Chopped Bagel:

  • Drizzle mayonnaise and toss gently.
  • Serve immediately with microgreens or sesame seeds as garnish.
