Caramel Banana Pudding

For the Caramel Sauce:
- 1 cup granulated sugar
- 6 tablespoons butter
- ½ cup heavy cream
For the Pudding:
- 5 large egg yolks
- ¾ cup granulated sugar
- ¼ cup cornstarch
- 3 cups whole milk
- 2 teaspoons pure vanilla extract
- ¼ teaspoon salt
For Assembly:
- 5-6 ripe bananas spotted but firm
- 1 box 11 oz vanilla wafer cookies
- 2 cups heavy whipping cream
- ¼ cup powdered sugar
- Extra vanilla wafers and caramel sauce for garnish
Make the Caramel Sauce:
Heat granulated sugar in a saucepan over medium heat, stirring constantly until it melts and turns amber.
Add butter and stir until melted, then slowly pour in heavy cream while stirring.
Simmer for 1-2 minutes until smooth. Set aside to cool.
Prepare the Pudding:
Whisk egg yolks, sugar, cornstarch, and salt in a bowl.
Heat milk in a saucepan until warm, then slowly whisk into the egg mixture.
Return to saucepan and cook over medium heat, stirring until thickened.
Remove from heat, stir in vanilla, and strain through a fine-mesh sieve for smoothness.
Assemble the Pudding:
Layer vanilla wafers, banana slices, and pudding in a dish.
Drizzle caramel sauce over each layer.
Repeat layers and top with whipped cream.
- Use ripe but firm bananas to prevent mushiness.
- Letting the pudding chill overnight enhances the flavors.
- For extra depth, sprinkle a pinch of sea salt over the caramel sauce.
- Swap vanilla wafers for shortbread cookies for a richer texture.
