Ingredients

  • 1 cup brown sugar
  • ½ cup coconut oil
  • 2 eggs
  • 1 tsp cinnamon

  • 1 tsp vanilla

For the Cream Cheese Frosting:

  • 8 oz cream cheese room temperature
  • ¼ cup butter room temperature
  • 2 cups powdered sugar
  • 1 tsp vanilla

Instructions
 

  • Preheat & Prep: Preheat oven to 350°F (175°C). Line a 9x13-inch pan with parchment paper.
  • Mix Wet Ingredients: In a bowl, whisk together eggs, coconut oil, brown sugar, and vanilla.
  • Combine Dry Ingredients: Fold in grated carrots, flour, cinnamon, and nutmeg. Mix until just combined.
  • Bake: Pour batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool: Allow bars to cool completely before frosting.
  • Prepare Frosting: Beat cream cheese, butter, powdered sugar, and vanilla until smooth. Spread evenly over cooled bars.
