Ingredients
  

For the Chocolate Chip Cookie Dough:

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup 2 sticks unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups semi-sweet chocolate chips

For the Cheesecake Filling:

  • 8 ounces cream cheese softened
  • ¼ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

Make the Cheesecake Filling:

  • Beat cream cheese until smooth.
  • Add sugar, mix until combined.
  • Mix in egg yolk, vanilla, and salt.
  • Chill for 1 hour, then scoop into small balls (~1 tsp each).
  • Freeze for 30 minutes.

Make the Cookie Dough:

  • Whisk flour, baking soda, and salt together.
  • Cream butter, sugars until fluffy (~3 min).
  • Add eggs one at a time, then vanilla.
  • Mix in dry ingredients gradually.
  • Fold in chocolate chips.
  • Chill dough for 1 hour.

Assemble the Cookies:

  • Scoop 2 tbsp cookie dough, flatten into a disc.
  • Place frozen cheesecake filling in center.
  • Fold dough around filling, sealing completely.
  • Roll into a smooth ball & place on a baking sheet.
  • Chill assembled cookies for 30 minutes.

Bake the Cookies:

  • Preheat oven to 350°F (175°C).
  • Bake for 12-14 minutes until edges are golden.
  • Cool for 5 minutes on the baking sheet, then transfer to a wire rack.
  • Allow to set for at least 30 minutes before serving.

Notes

  • For less spreading: Always chill the dough before baking.
  • For a gourmet touch: Sprinkle flaky sea salt on top before baking.
  • For a gooey center: Microwave for 10 seconds before serving.
  • For variety: Try using white chocolate chips, peanut butter, or red velvet dough!
