For the Chocolate Chip Cookie Dough: 2 ¼ cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 1 cup 2 sticks unsalted butter, softened ¾ cup granulated sugar ¾ cup packed brown sugar 2 large eggs 2 teaspoons vanilla extract 2 cups semi-sweet chocolate chips For the Cheesecake Filling: 8 ounces cream cheese softened ¼ cup granulated sugar 1 large egg yolk 1 teaspoon vanilla extract Pinch of salt
Make the Cheesecake Filling: Beat cream cheese until smooth.
Add sugar, mix until combined.
Mix in egg yolk, vanilla, and salt.
Chill for 1 hour, then scoop into small balls (~1 tsp each).
Freeze for 30 minutes.
Make the Cookie Dough: Whisk flour, baking soda, and salt together.
Cream butter, sugars until fluffy (~3 min).
Add eggs one at a time, then vanilla.
Mix in dry ingredients gradually.
Fold in chocolate chips.
Chill dough for 1 hour.
Assemble the Cookies: Scoop 2 tbsp cookie dough, flatten into a disc.
Place frozen cheesecake filling in center.
Fold dough around filling, sealing completely.
Roll into a smooth ball & place on a baking sheet.
Chill assembled cookies for 30 minutes.
Bake the Cookies: Preheat oven to 350°F (175°C).
Bake for 12-14 minutes until edges are golden.
Cool for 5 minutes on the baking sheet, then transfer to a wire rack.
Allow to set for at least 30 minutes before serving.
