Ingredients
  

For the Balls:

  • 2 large heads of broccoli 1.5 lbs
  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 3 large eggs
  • 1 cup panko breadcrumbs divided
  • 3 garlic cloves minced
  • 1 small onion finely diced
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes optional
  • Salt and black pepper to taste

For Cooking:

  • Olive oil spray or 3 tbsp olive oil

Instructions
 

Prepare the Broccoli:

  • Bring a large pot of salted water to a boil.
  • Cut broccoli into small florets.
  • Blanch for 2-3 minutes until bright green.
  • Transfer to an ice bath and drain well.
  • Finely chop the cooled broccoli.

Create the Mixture:

  • In a large mixing bowl, combine the broccoli, 1½ cups of cheddar, Parmesan, eggs, half the panko, garlic, onion, parsley, oregano, and red pepper flakes.
  • Season with salt and pepper.
  • Mix thoroughly and refrigerate for 30 minutes.

Shape and Coat:

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • Place the remaining panko in a shallow dish.
  • Form the broccoli mixture into 1½-inch balls using damp hands.
  • Roll in panko to coat.

Bake:

  • Place balls on the baking sheet and spray lightly with olive oil.
  • Bake for 20-25 minutes, turning halfway through, until golden brown.
  • Let cool for 5 minutes before serving.
