Ingredients

For the Pasta Base:

  • 1 pound spaghetti
  • 4 cups chicken broth or vegetable broth for vegetarian
  • 1 cup water

For the Garlic Parmesan Sauce:

  • 6 cloves garlic minced
  • 4 tablespoons butter unsalted preferred
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup heavy cream or half-and-half
  • 1/2 teaspoon freshly ground black pepper
  • Salt to taste

For Garnish:

  • 2 tablespoons fresh parsley chopped
  • Extra Parmesan cheese for serving
  • Red pepper flakes optional, for heat

Instructions

Step 1: Prepare Your One-Pot Setup

  • Use a large deep skillet or Dutch oven with a lid.
  • Measure and prep all ingredients.

Step 2: Cook the Pasta in Broth

  • Bring chicken broth and water to a boil.
  • Add spaghetti and stir occasionally to prevent sticking.
  • Cook uncovered for about 5 minutes until partially cooked.

Step 3: Sauté Garlic in Butter

  • Melt butter in a separate pan over medium-low heat.
  • Add garlic and cook for 1-2 minutes until fragrant. (Do not brown!)

Step 4: Make the Creamy Sauce

  • Pour garlic-butter mixture into the pasta pot.
  • Add heavy cream and stir well.
  • Continue cooking for 3-4 more minutes until pasta is al dente.

Step 5: Stir in Parmesan and Finish

  • Reduce heat to low and stir in black pepper and half of the Parmesan.
  • Stir continuously until melted, then add the rest of the Parmesan.
  • Adjust seasoning with salt as needed.

Step 6: Serve and Enjoy

  • Let rest for 1-2 minutes before serving.
  • Garnish with parsley, extra Parmesan, and red pepper flakes if desired.

Notes

  • Make it heartier – Add grilled chicken, shrimp, or roasted veggies.
  • For a fresh twist – Add lemon zest & juice for brightness.
  • Make it spicy – Use Italian sausage & extra red pepper flakes.
  • For extra richness – Drizzle with truffle oil and add sautéed mushrooms.
  • Dairy-free option – Use olive oil instead of butter, coconut milk instead of cream, and nutritional yeast instead of Parmesan.
