Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Cheese & Herbs:

  • 1 1/2 cups shredded sharp cheddar cheese or Gruyère, Monterey Jack
  • 2 tbsp chopped fresh parsley or chives, dill
  • 1 tsp chopped fresh thyme or 1/2 tsp dried thyme

Wet Ingredients:

  • 1 cup whole milk or oat/almond milk
  • 1/2 cup sour cream or Greek yogurt
  • 1 large egg
  • 1/4 cup olive oil or melted butter

Instructions

Preheat Oven:

  • Preheat your oven to 350°F (175°C). Grease a 9x5 loaf pan or line with parchment paper.

Mix Dry Ingredients:

  • In a large bowl, whisk together flour, baking powder, salt, and pepper. Stir in shredded cheese and herbs to coat.

Mix Wet Ingredients:

  • In another bowl, whisk together milk, sour cream, egg, and oil until smooth.

Combine & Stir:

  • Pour wet into dry ingredients. Stir just until moistened—don’t overmix.

Bake:

  • Spoon batter into the loaf pan and smooth the top. Bake for 45–50 minutes, or until golden brown and a toothpick comes out clean.

Cool & Slice:

  • Let the loaf cool in the pan for 10 minutes, then transfer to a rack to cool fully before slicing.

Notes

  • Variations:
    • Add cooked bacon bits or sun-dried tomatoes for extra flavor.
    • Use a mix of cheeses (cheddar + parmesan = amazing!).
  • Storage:
    • Store in an airtight container for up to 3 days at room temp, or freeze slices for up to 2 months.
  • Make it gluten-free:
    Substitute with a 1:1 gluten-free flour blend.
