Ingredients
  

For the Chicken:

  • 2 lbs boneless skinless chicken thighs
  • 1 cup cornstarch
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp white pepper
  • Vegetable oil for frying

For the Honey Sauce:

  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 3 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 tbsp ginger freshly grated
  • 1 tsp sesame oil

Instructions
 

Prepare the Chicken

  • Cut the chicken into bite-sized pieces.
  • In a large bowl, whisk together eggs, salt, and pepper.
  • Set up a separate bowl with cornstarch for coating.
  • Dip each piece of chicken into the egg mixture, then coat in cornstarch.

Fry the Chicken

  • Heat oil in a frying pan or deep fryer to 375°F.
  • Fry the chicken in batches, about 3-4 minutes per batch, until golden brown.
  • Drain on a paper towel to remove excess oil.

Make the Honey Sauce

  • In a medium saucepan, combine honey, soy sauce, rice vinegar, garlic, and ginger.
  • Simmer over medium heat for 2-3 minutes until the sauce thickens and becomes glossy.
  • Stir in sesame oil for added flavor.

Combine and Serve

  • Toss the fried chicken in the honey glaze until fully coated.
  • Serve immediately with rice or vegetables.

Notes

  • For extra crunch, double fry the chicken by frying a second time for 1-2 minutes.
  • Use local honey for the best flavor.
  • Add red pepper flakes for a spicy twist.
  • Serve with steamed broccoli or fried rice for a complete meal.
