For the Banana Bread Base:
- 3 large ripe bananas about 1½ cups mashed
- ½ cup unsalted butter melted & slightly cooled
- ¾ cup granulated sugar
- 2 large eggs room temperature
- 1½ tsp pure vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ tsp ground cinnamon
- ¼ cup buttermilk or sour cream
For the Cinnamon Swirl:
- ⅓ cup granulated sugar
- 2 tbsp packed brown sugar
- 2 tsp ground cinnamon
- 2 tbsp unsalted butter melted
- 1 tbsp all-purpose flour
Optional Topping:
- 2 tbsp granulated sugar + ½ tsp cinnamon
1️⃣ Prepare Your Kitchen:
2️⃣ Make the Banana Bread Batter:
Mash bananas in a large bowl until smooth with some small lumps.
Whisk in melted butter, sugar, eggs, and vanilla until well combined.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
Gently fold dry ingredients into the wet mixture, alternating with buttermilk or sour cream. Do not overmix.
3️⃣ Make the Cinnamon Swirl & Layer the Batter:
In a small bowl, mix sugar, brown sugar, cinnamon, melted butter, and flour until it forms a thick paste.
Pour half the banana bread batter into the loaf pan.
Spoon or sprinkle half of the cinnamon mixture over the batter.
Repeat with remaining batter and cinnamon mixture.
Swirl gently with a butter knife to create a marbled effect.
4️⃣ Bake & Cool:
If using, sprinkle cinnamon-sugar topping over the batter.
Bake for 55-65 minutes, until a toothpick comes out clean.
Let cool in the pan for 15 minutes, then transfer to a wire rack to cool for 1 hour.
