classic Shrimp Scampi Pasta

- 1 lb large shrimp peeled and deveined
- 12 oz linguine or spaghetti
- 4 tbsp butter
- 3 tbsp olive oil
- 5 garlic cloves minced
- ½ tsp red pepper flakes
- ½ cup dry white wine Sauvignon Blanc or Pinot Grigio
- ¼ cup fresh lemon juice
- Zest of 1 lemon
- ¼ cup fresh parsley chopped
- Salt & pepper to taste
- Grated Parmesan for garnish
Cook pasta until al dente, reserve ½ cup pasta water, then drain.
Heat butter and olive oil in a large skillet over medium heat.
Sauté garlic and red pepper flakes until fragrant (1 minute).
Add shrimp in a single layer and cook for 2 minutes per side until pink. Remove and set aside.
Pour white wine into the skillet, scraping up browned bits. Simmer until reduced by half.
Stir in lemon juice, zest, and parsley.
Return shrimp to the pan, toss in cooked pasta, and add pasta water if needed for consistency.
Garnish with Parmesan and extra parsley. Serve immediately.
