Meat:
- 3 pounds bone-in beef short ribs
Seasonings:
- 2 teaspoons salt
- Black pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 cup scallions chopped
- 2 tablespoons soy sauce
- 1 teaspoon allspice
- 3 cloves garlic minced
- 1 tablespoon ginger grated
Stew:
- 1/3 cup brown sugar
- 1 cup onion diced
- 1 habanero pepper finely diced
- 3 thyme sprigs
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 cup carrots diced
- 1 cup bell peppers diced
- 1 1/2 cups cooked lima beans
Preparation:
Clean the short ribs using water and a little lime or lemon juice. Pat dry.
Season with salt and pepper, allowing them to sit for 5 minutes.
Marination:
Combine garlic powder, onion powder, scallions, soy sauce, allspice, minced garlic, and grated ginger into a marinade.
Coat the ribs thoroughly, cover, and refrigerate for at least 2 hours (or overnight for best results).
Sauté Aromatics:
In the same pot, sauté onions, carrots, and bell peppers until softened. Add thyme and habanero pepper
Cooking:
Return the ribs to the pot. Add ketchup, Worcestershire sauce, and brown sugar.
Cover and cook in a preheated oven at 325°F for 3.5 hours (or cook in a slow cooker on low for 8 hours).
- Adjust spice levels by adding more or less habanero pepper.
- For a thicker sauce, use a cornstarch slurry (1 tablespoon cornstarch + 1 tablespoon water).
