Ingredients
  

Base Ingredients:

  • 4 large eggs separated
  • 1/2 cup cottage cheese 4% milkfat recommended
  • 1/4 teaspoon cream of tartar
  • Optional Flavor Enhancers:
  • 1/4 teaspoon salt
  • 1 tablespoon herbs rosemary, thyme, or chives
  • 1/4 cup grated hard cheese Parmesan or aged cheddar

Dietary Adaptations:

  • Dairy-free: Use plant-based cottage cheese
  • Keto: Add everything bagel seasoning garlic powder, or onion powder

Instructions
 

  • Preheat & Prepare: Preheat oven to 300°F (150°C). Line baking sheets with parchment paper.
  • Blend the Base: In a food processor or blender, blend cottage cheese and egg yolks until smooth. Set aside.
  • Whip the Egg Whites: Beat egg whites and cream of tartar until stiff peaks form.
  • Fold Gently: Fold 1/3 of the egg whites into the cottage cheese mixture to lighten. Gently fold in the rest without overmixing.
  • Shape & Bake: Spoon 8-10 rounds onto the baking sheets. Bake for 25-30 minutes until golden brown.
  • Cool & Enjoy: Let cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely.

Notes

  • Meal Prep: Store in an airtight container in the fridge for up to 3 days.
  • Freezing: Freeze between parchment layers and reheat in the toaster.
  • Serving Ideas: Use as a sandwich base, avocado toast, or even a light dessert with berries and whipped cream.
