Ingredients
  

🍑 Mango Base:

  • cups ripe mango puree fresh or canned
  • 1 –2 tbsp sugar or honey to taste
  • 1 tbsp lime juice
  • Pinch of salt

🥛 Cream Layer:

  • 1 cup heavy whipping cream or full-fat coconut cream for dairy-free
  • Optional: 1 tsp unflavored gelatin + 2 tbsp cold water for a firmer set

Instructions
 

Blend Mango Puree

  • Peel, dice, and blend mango until smooth.
  • Stir in sugar/honey, lime juice, and salt. Adjust sweetness if needed.

Optional: Set Gelatin

  • Sprinkle gelatin over cold water. Let sit 5 min, then gently heat until dissolved.
  • Stir into mango puree and mix well.
  • Tip: For agar agar, dissolve in boiling water according to the package.

Whip the Cream

  • In a chilled bowl, whip cream until soft peaks form.
  • Don’t overwhip—aim for a light, fluffy texture.

Fold Gently

  • Fold the whipped cream into the mango puree in 2–3 batches using a spatula.
  • Stop once fully combined—keep it airy!

Chill & Serve

  • Spoon into glasses or ramekins.
  • Chill for at least 2 hours or overnight.
  • Garnish with mint, mango cubes, or toasted coconut if desired.

Notes

  • Make Ahead: Can be made 1–2 days in advance.
  • No gelatin? Skip it for a softer, spoonable mousse.
  • Want vegan? Use coconut cream + maple syrup.
  • Toppings: Try crushed cookies, pistachios, or berry coulis.
