🍑 Mango Base: 1½ cups ripe mango puree fresh or canned 1 –2 tbsp sugar or honey to taste 1 tbsp lime juice Pinch of salt 🥛 Cream Layer: 1 cup heavy whipping cream or full-fat coconut cream for dairy-free Optional: 1 tsp unflavored gelatin + 2 tbsp cold water for a firmer set
Blend Mango Puree Peel, dice, and blend mango until smooth.
Stir in sugar/honey, lime juice, and salt. Adjust sweetness if needed.
Optional: Set Gelatin Sprinkle gelatin over cold water. Let sit 5 min, then gently heat until dissolved.
Stir into mango puree and mix well.
Tip: For agar agar, dissolve in boiling water according to the package.
Whip the Cream In a chilled bowl, whip cream until soft peaks form.
Don’t overwhip—aim for a light, fluffy texture.
Chill & Serve Spoon into glasses or ramekins.
Chill for at least 2 hours or overnight.
Garnish with mint, mango cubes, or toasted coconut if desired.
