- 1 bay leaf

- 2 cups fresh spinach roughly chopped
- ½ cup freshly grated Parmesan cheese plus more for serving

- 2 tablespoons fresh parsley or basil chopped
- 2 tablespoons heavy cream optional
- Freshly cracked black pepper
Step 1: Build Your Flavor Base
Heat olive oil in a large Dutch oven over medium heat.
Add the onion, carrots, and celery. Sauté for 5-7 minutes until softened.
Stir in the garlic and Italian seasoning. Cook for 30-60 seconds until fragrant.
