Equipment

  • 6-quart air fryer

Ingredients
  

  • 2 cups cold mashed potatoes
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan
  • 2 tbsp chopped chives
  • 1 large egg divided
  • ½ cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Olive oil spray

Instructions
 

  • Mix: Combine potatoes, ½ cup cheddar, Parmesan, chives, and ½ beaten egg. Chill 30 mins.
  • Form: Scoop 1-tbsp portions, press cheese cube center, roll into balls.
  • Coat: Dredge in flour → remaining egg → panko (mixed with spices).
  • Air Fry: Single layer in air fryer. Spray with oil. Cook at 380°F for 10-12 mins, flip halfway.
  • Serve: Immediately with ranch or marinara!

Notes

  • Gluten-Free: Use GF breadcrumbs + 1:1 flour
  • Vegan: Substitute with vegan cheese + flax egg
  • Make-Ahead: Freeze uncooked balls up to 3 months
  • Extra Crispy: Double-coat in breadcrumbs
