- 2 cups cold mashed potatoes
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan
- 2 tbsp chopped chives
- 1 large egg divided
- ½ cup all-purpose flour
- 1 cup panko breadcrumbs
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Olive oil spray
Mix: Combine potatoes, ½ cup cheddar, Parmesan, chives, and ½ beaten egg. Chill 30 mins.
Form: Scoop 1-tbsp portions, press cheese cube center, roll into balls.
Coat: Dredge in flour → remaining egg → panko (mixed with spices).
Air Fry: Single layer in air fryer. Spray with oil. Cook at 380°F for 10-12 mins, flip halfway.
