Ingredients
  

The Base

  • 1 lb cottage cheese full-fat preferred
  • 2 large eggs
  • 1/4 cup finely grated Parmesan cheese

Dry Ingredients

  • 1/2 cup almond flour
  • 1 tbsp psyllium husk powder or ground flaxseed
  • 1/2 tsp baking powder aluminum-free

Seasonings

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried herbs Italian, thyme, or rosemary
  • 1/4 tsp cayenne pepper optional
  • 3/4 tsp sea salt adjust to taste
  • Freshly ground black pepper to taste

Instructions
 

Preheat Oven & Prep:

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment or silicone mats. Bring ingredients to room temp.

Blend Base:

  • In a food processor, blend cottage cheese, eggs, and Parmesan until smooth (about 30–45 seconds).

Add Dry Ingredients:

  • Add almond flour, psyllium husk, baking powder, and seasonings. Pulse to combine. Let sit 5 minutes to thicken.

Spread Mixture:

  • Spread thinly (~1/8") onto baking sheets using a spatula. Score into chip-sized pieces if desired. Use parchment + rolling pin for even thickness.

Bake & Dry:

  • Bake 18–22 minutes until edges brown and center is set. Turn off oven, crack door, and let chips cool inside for 15–20 minutes for max crispness.

Cool & Store:

  • Let chips cool fully on the baking sheet. Break into pieces. Store in an airtight container up to 5 days.
