Crock Pot Cajun Chicken Pasta

For the Chicken Base:
- 2 lbs boneless skinless chicken breasts
- 2 tbsp Cajun seasoning
- 1 tbsp olive oil
- 1 large onion diced
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 4 cloves garlic minced
For the Creamy Sauce:
- 1 can 14.5 oz fire-roasted diced tomatoes
- 1 cup chicken broth
- 8 oz cream cheese softened
- 1 cup heavy cream
- 2 tsp Worcestershire sauce
- ½ tsp dried thyme
- ¼ tsp cayenne pepper optional
For Finishing:
- 12 oz penne pasta
- 1 cup freshly grated Parmesan cheese
- 3 green onions sliced
- Fresh parsley chopped
- Salt & black pepper to taste
Build the Flavor Base:
Sauté onions and bell peppers in the same skillet for 3-4 min.
Add garlic, cook 30 sec, then stir in the remaining Cajun seasoning.
Transfer mixture to slow cooker.
Create the Sauce Base:
Add fire-roasted tomatoes, chicken broth, Worcestershire sauce, thyme, and cayenne to slow cooker.
Cover and cook on LOW (4-5 hrs) or HIGH (2-3 hrs) until chicken is fork-tender.
Shred the Chicken:
Remove chicken, shred with forks, then return to the slow cooker.
Make the Creamy Sauce:
Stir in cream cheese and heavy cream.
Cook on HIGH for 30 minutes until smooth.
Cook the Pasta & Finish the Dish:
Cook pasta to al dente, drain, and add to slow cooker.
Stir in ¾ cup Parmesan until melted.
Season with salt/pepper to taste.
