Ingredients
  

For the Chicken Base:

  • 2 lbs boneless skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 large onion diced
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 4 cloves garlic minced

For the Creamy Sauce:

  • 1 can 14.5 oz fire-roasted diced tomatoes
  • 1 cup chicken broth
  • 8 oz cream cheese softened
  • 1 cup heavy cream
  • 2 tsp Worcestershire sauce
  • ½ tsp dried thyme
  • ¼ tsp cayenne pepper optional

For Finishing:

  • 12 oz penne pasta
  • 1 cup freshly grated Parmesan cheese
  • 3 green onions sliced
  • Fresh parsley chopped
  • Salt & black pepper to taste

Instructions
 

Prepare the Chicken:

  • Coat chicken with 1 tbsp Cajun seasoning.
  • Heat olive oil in a skillet and brown chicken (2-3 min per side).
  • Transfer to slow cooker.

Build the Flavor Base:

  • Sauté onions and bell peppers in the same skillet for 3-4 min.
  • Add garlic, cook 30 sec, then stir in the remaining Cajun seasoning.
  • Transfer mixture to slow cooker.

Create the Sauce Base:

  • Add fire-roasted tomatoes, chicken broth, Worcestershire sauce, thyme, and cayenne to slow cooker.
  • Cover and cook on LOW (4-5 hrs) or HIGH (2-3 hrs) until chicken is fork-tender.

Shred the Chicken:

  • Remove chicken, shred with forks, then return to the slow cooker.
  • Make the Creamy Sauce:
  • Stir in cream cheese and heavy cream.
  • Cook on HIGH for 30 minutes until smooth.

Cook the Pasta & Finish the Dish:

  • Cook pasta to al dente, drain, and add to slow cooker.
  • Stir in ¾ cup Parmesan until melted.
  • Season with salt/pepper to taste.

Serve:

  • Garnish with remaining Parmesan, green onions, and parsley.
  • Serve hot and enjoy!

Notes

  • Variations: Add shrimp, andouille sausage, extra veggies, corn/jalapeños, or lighten it with lemon & basil.
  • Storage: Store leftovers in an airtight container for up to 3 days.
