Ingredients
  

  • 2 cups granulated sugar
  • ½ cup water

  • 6 oz dark chocolate 60-70%, chopped
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
  • ½ tsp sea salt

Instructions
 

  • Caramelize Sugar: Combine sugar + water in saucepan. Cook over medium-high heat without stirring until deep amber (350°F on thermometer).
  • Add Cream: Slowly whisk in warm cream (mixture will bubble vigorously).
  • Melt Chocolate: Reduce heat to low. Whisk in chocolate until smooth.
  • Finish: Stir in butter, vanilla, and salt. Cool slightly before transferring to jars.
