Cake: 1 cup unsalted butter 1.5 cups raw sugar 2.5 cups all-purpose flour 3 large eggs ¾ cup maraschino cherries chopped ½ cup chocolate chips optional 2 tsp baking powder 1 tsp sea salt ½ cup vegetable oil 1 cup whole milk 1 tsp pure vanilla extract Frosting: 1 cup unsalted butter 4 cups powdered sugar sifted ¼ cup heavy whipping cream 1 tsp vanilla extract ¼ tsp almond extract
Preheat oven to 325°F (163°C). Grease a 9-inch cake pan.
Mix dry ingredients – whisk flour, baking powder, and salt in a bowl.
Prepare wet ingredients – beat butter, sugar, eggs, vanilla, oil, and milk until smooth.
Fold in cherries & chips – gently mix chopped maraschino cherries and chocolate chips.
Bake – pour batter into the pan and bake for 25-30 minutes until a toothpick comes out clean. Let cool.
Make frosting – beat butter, powdered sugar, cream, vanilla, and almond extract until fluffy.
