Ingredients
  

Cake:

  • 1 cup unsalted butter
  • 1.5 cups raw sugar
  • 2.5 cups all-purpose flour
  • 3 large eggs
  • ¾ cup maraschino cherries chopped
  • ½ cup chocolate chips optional
  • 2 tsp baking powder
  • 1 tsp sea salt
  • ½ cup vegetable oil
  • 1 cup whole milk
  • 1 tsp pure vanilla extract

Frosting:

  • 1 cup unsalted butter
  • 4 cups powdered sugar sifted
  • ¼ cup heavy whipping cream
  • 1 tsp vanilla extract
  • ¼ tsp almond extract

Instructions
 

  • Preheat oven to 325°F (163°C). Grease a 9-inch cake pan.
  • Mix dry ingredients – whisk flour, baking powder, and salt in a bowl.
  • Prepare wet ingredients – beat butter, sugar, eggs, vanilla, oil, and milk until smooth.
  • Fold in cherries & chips – gently mix chopped maraschino cherries and chocolate chips.
  • Bake – pour batter into the pan and bake for 25-30 minutes until a toothpick comes out clean. Let cool.
  • Make frosting – beat butter, powdered sugar, cream, vanilla, and almond extract until fluffy.
  • Decorate – frost the cake and garnish with maraschino cherries. Enjoy!

Notes

  • For a gluten-free version, swap all-purpose flour with almond or coconut flour.
  • Use Bing cherries for a richer cherry flavor.
  • Try white & dark chocolate chips for a fun marbled effect.
