Ingredients
  

  • 1/2 cup sourdough starter active and bubbly
  • 3/4 cup warm water
  • 1/4 cup cocoa powder
  • 3 tbsp honey or sugar
  • 1/2 tsp salt
  • 1/4 cup olive oil or melted butter
  • 2 1/2 cups all-purpose flour plus extra for kneading
  • 1/2 cup dark chocolate chunks or chips
  • Optional: 1/4 cup chopped nuts or dried fruit e.g., cranberries

Instructions
 

  • Mix Dough: In a large bowl, mix the sourdough starter, warm water, cocoa powder, honey (or sugar), and olive oil. Stir until well combined.
  • Add Dry Ingredients: Gradually add the flour and salt, mixing until a sticky dough forms.
  • Knead: Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Gently fold in chocolate chunks (and optional add-ins) during the final kneads.
  • First Rise: Place the dough in a greased bowl, cover with a damp towel, and let rise at room temperature for 4-6 hours or overnight in the fridge.
  • Shape: Punch down the dough and shape it into a round or oblong loaf. Place on a parchment-lined baking sheet or in a greased loaf pan.
  • Second Rise: Cover and let the loaf rise for 1-2 hours, or until it puffs up slightly.
  • Bake: Preheat the oven to 375°F (190°C). Bake the loaf for 35-40 minutes, or until the crust is firm and the bread sounds hollow when tapped.
  • Cool: Let the bread cool completely on a wire rack before slicing.

Notes

  • For extra decadence, sprinkle the top with coarse sugar before baking.
  • Store at room temperature for up to 3 days or freeze for longer storage.
  • Serve toasted with butter or as a sweet sandwich with cream cheese.
