Ingredients
  

For the Burgers:

  • 1 lb 80/20 ground beef or chuck/short rib blend
  • 4 slices American cheese or cheddar, Monterey Jack
  • 4 potato or brioche burger buns
  • Salt & pepper to taste
  • 1 tbsp butter for toasting buns

For the New York Special Sauce:

  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle relish
  • 1 tsp Worcestershire sauce
  • ½ tsp garlic powder

Instructions
 

Prepare the Special Sauce:

  • Mix all sauce ingredients in a bowl and refrigerate until ready to use.

Preheat the Griddle/Pan:

  • Heat your griddle or cast iron skillet to high heat (~450°F).

Form the Burger Patties:

  • Divide ground beef into 4 equal portions (loosely packed balls).

Smash & Cook the Burgers:

  • Place meat balls on the hot surface and immediately smash flat with a spatula.
  • Season with salt & pepper.
  • Cook for 1-2 minutes until crispy edges form.

Flip & Add Cheese:

  • Flip patties once and immediately add cheese.
  • Cook for another 1-2 minutes until melted.

oast the Buns:

  • Spread butter on buns and toast them on the griddle until golden brown.

Assemble the Burger:

  • Spread special sauce on buns.
  • Stack two patties with melted cheese.
  • Add additional toppings (optional).

Notes

  • For extra crispiness: Press down with spatula again after flipping.
  • Customize flavors: Try adding crispy bacon, caramelized onions, or jalapeños.
  • Make-ahead tip: Special sauce can be made 3 days in advance.
