2️⃣ Prepare the Wet Mixture
Blend cottage cheese, eggs, olive oil, and honey in a blender until smooth.
3️⃣ Combine Dry and Wet Ingredients
In a large bowl, whisk together flour, salt, baking powder, and remaining sugar. Create a well in the center and pour in the yeast mixture and blended wet ingredients. Mix until a soft, slightly sticky dough forms.
4️⃣ First Rise
Knead dough for 6-8 minutes until smooth and elastic. Place in a lightly oiled bowl, cover with a damp towel, and let rise in a warm place for 45-60 minutes, until doubled in size.
5️⃣ Shaping and Second Rise
Gently deflate the dough and shape into a loaf. Place in a greased 9x5-inch loaf pan, cover, and let rise for another 30 minutes. Meanwhile, preheat oven to 375°F (190°C).
6️⃣ Baking
Brush top with egg wash or olive oil. Sprinkle with optional toppings. Bake for 35-40 minutes, until golden brown and sounds hollow when tapped. Internal temp should be 190-200°F.
7️⃣ Cooling & Serving
Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
