Ingredients
  

Dry Ingredients

  • 3 cups all-purpose flour King Arthur recommended
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • ½ teaspoon baking powder

Wet Ingredients

  • 1 cup full-fat cottage cheese
  • ¼ cup warm water 110-115°F
  • 2 large eggs
  • 3 tablespoons olive oil
  • 1 tablespoon honey

Optional Toppings

  • Sesame seeds
  • Flaky sea salt
  • Dried herbs rosemary, thyme

Instructions
 

1️⃣ Activate the Yeast

  • In a small bowl, combine warm water, yeast, and a pinch of sugar. Let sit for 5-7 minutes until frothy.

2️⃣ Prepare the Wet Mixture

  • Blend cottage cheese, eggs, olive oil, and honey in a blender until smooth.

3️⃣ Combine Dry and Wet Ingredients

  • In a large bowl, whisk together flour, salt, baking powder, and remaining sugar. Create a well in the center and pour in the yeast mixture and blended wet ingredients. Mix until a soft, slightly sticky dough forms.

4️⃣ First Rise

  • Knead dough for 6-8 minutes until smooth and elastic. Place in a lightly oiled bowl, cover with a damp towel, and let rise in a warm place for 45-60 minutes, until doubled in size.

5️⃣ Shaping and Second Rise

  • Gently deflate the dough and shape into a loaf. Place in a greased 9x5-inch loaf pan, cover, and let rise for another 30 minutes. Meanwhile, preheat oven to 375°F (190°C).

6️⃣ Baking

  • Brush top with egg wash or olive oil. Sprinkle with optional toppings. Bake for 35-40 minutes, until golden brown and sounds hollow when tapped. Internal temp should be 190-200°F.

7️⃣ Cooling & Serving

  • Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Herb-Infused Version
  • Add 2 tbsp fresh chopped herbs (rosemary, thyme, or Italian herbs)
  • Sprinkle extra herbs on top before baking
Gluten-Free Adaptation
  • Replace all-purpose flour with gluten-free blend
  • Add 1 tsp xanthan gum
  • Use a dairy-free cottage cheese alternative
Whole Wheat Option
  • Replace 1 cup all-purpose flour with whole wheat flour
  • Add 1 tbsp vital wheat gluten for better texture
  • Increase liquid by 2 tbsp
Cheesy Twist
  • Add ½ cup shredded cheddar
  • Include 2 tbsp nutritional yeast
  • Sprinkle extra cheese on top before baking

  • Mix in ¼ cup sunflower seeds
