Garlic Butter Steak Tips with Cheesy Rigatoni

For Steak & Sauce:
- 1.5 lbs sirloin steak 1" cubes
- 4 tbsp unsalted butter
- 6 garlic cloves minced
- 1 tsp fresh rosemary chopped
- ½ cup beef broth
For Pasta:
- 12 oz rigatoni
- 1 cup heavy cream
- 1.5 cups Parmesan freshly grated
- 1 cup mozzarella shredded
- ½ tsp nutmeg
- Salt & pepper
Cook Pasta: Boil rigatoni in salted water until al dente. Reserve 1 cup pasta water.
Sear Steak: Pat steak dry, season. Sear in hot skillet 2 mins/side. Remove.
Make Garlic Butter: Melt butter in skillet. Add garlic + rosemary, cook 1 min.
Deglaze: Pour in broth, scrape browned bits. Simmer 3 mins.
Cheese Sauce: Reduce heat. Stir in cream + cheeses until melted. Add nutmeg.
Combine: Toss pasta + steak in sauce. Add pasta water as needed for creaminess.
