Ingredients
  

For the Cauliflower Steaks:

  • 2 large cauliflower heads
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • Salt & black pepper to taste

For the Cheesy Topping:

  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 tbsp fresh parsley chopped
  • Red pepper flakes optional

Instructions
 

1️⃣ Prep the Cauliflower

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Trim leaves and stem from cauliflower, keeping the core intact.
  • Slice into 1-inch thick "steaks" (each head yields ~2-3 steaks).

2️⃣ Season & Roast

  • Mix olive oil, garlic, paprika, thyme, salt, and pepper.
  • Brush both sides of steaks with the oil mixture.
  • Roast for 20 minutes, flipping halfway, until golden brown.

3️⃣ Add Cheese & Finish

  • Mix cheddar, mozzarella, and Parmesan.
  • Sprinkle over cauliflower steaks and bake for 7-10 more minutes.
  • For extra golden cheese, broil for 1-2 minutes.
  • Garnish with parsley and red pepper flakes. Serve hot!

Notes

  • Mediterranean: Use feta instead of cheddar and add olives & tomatoes.
  • Buffalo: Toss cauliflower in buffalo sauce & top with blue cheese.
  • Tex-Mex: Add cumin, chili powder, and jalapeños; serve with salsa.
  • Italian: Use provolone & mozzarella; add marinara sauce.
  • Pesto: Swap olive oil for basil pesto and top with pine nuts.
