Ingredients
  

For the Chicken

  • 2 boneless skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/4 cup fresh herbs parsley, thyme, rosemary
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • Sea salt and freshly ground black pepper
  • 2 tablespoons olive oil

For the Sandwich

  • 4 slices artisan sourdough bread
  • 2 tablespoons garlic aioli
  • 1/4 cup arugula
  • 2 slices aged cheddar cheese
  • 1 ripe tomato thinly sliced
  • Pickled red onions

Instructions
 

1️⃣ Prepare the Chicken:

  • Set up a breading station:
  • Dish 1: Mix panko, finely chopped herbs, salt, and pepper.
  • Dish 2: Whisk eggs.
  • Dish 3: Add flour.

2️⃣ Butterfly & Tenderize:

  • Slice the chicken breasts in half horizontally (butterfly).
  • Pound to ½-inch thickness for even cooking.

3️⃣ Bread the Chicken:

  • Dredge in flour → dip in egg → coat in panko mixture.
  • Press breadcrumbs firmly for a crisp, even coating.

4️⃣ Cook the Chicken:

  • Heat olive oil in a skillet over medium-high heat.
  • Fry chicken 3-4 minutes per side until golden brown and crispy.
  • Ensure internal temp reaches 165°F (75°C).

5️⃣ Assemble the Sandwich:

  • Toast the sourdough until golden.
  • Spread garlic aioli on both slices.
  • Layer: arugula → cheddar cheese → crispy chicken → tomato → pickled onions.
  • Top with second slice of sourdough & serve!

Notes
