Ingredients
  

  • 1/2 cup unsalted butter 113 grams
  • 1/2 cup granulated sugar 100 grams
  • 1/2 cup brown sugar 100 grams
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour 180 grams
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup Rice Krispies cereal 25 grams
  • 1/2 cup semi-sweet chocolate chips 90 grams

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Cream Butter and Sugars: In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Add Rice Krispies and Chocolate Chips: Fold in the Rice Krispies cereal and chocolate chips.
  • Scoop and Bake: Using a medium cookie scoop, drop dough onto a parchment-lined baking sheet, spacing cookies about 2 inches apart. Bake for 8-10 minutes, or until lightly golden brown.
  • Cool: Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a festive twist, try adding butterscotch chips, peanut butter chips, or M&M candies.
  • To make gluten-free, substitute the all-purpose flour with almond flour or coconut flour.
  • For a dairy-free version, use dairy-free chocolate chips and a butter substitute.
