Ingredients
  

  • 2 lbs Yukon Gold potatoes
  • 3 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 3 tbsp honey or maple syrup for vegan
  • 3 garlic cloves minced
  • 1 tbsp fresh rosemary chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp paprika

Instructions
 

  • Prep Potatoes: Scrub potatoes, dry thoroughly, and cut into 1-inch wedges.
  • Make Glaze: Whisk olive oil, mustards, honey, garlic, rosemary, salt, pepper, and paprika in a bowl.
  • Coat: Toss potatoes in glaze until fully coated.
  • Roast: Spread on parchment-lined baking sheet. Bake at 425°F (220°C) for 35-40 mins, flipping halfway.
  • Finish: Optional: Drizzle extra glaze last 5 mins for caramelization.

Notes

  • Vegan: Swap honey for maple syrup
  • Make-Ahead: Prep glaze 1 day ahead; coat potatoes before roasting
  • Extra Crispy: Space potatoes evenly – no overlapping!
  • Spice It Up: Add ¼ tsp cayenne or chili flakes
