- 2 lbs Yukon Gold potatoes
- 3 tbsp olive oil
- 2 tbsp Dijon mustard
- 2 tbsp whole grain mustard
- 3 tbsp honey or maple syrup for vegan
- 3 garlic cloves minced
- 1 tbsp fresh rosemary chopped
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp paprika
Prep Potatoes: Scrub potatoes, dry thoroughly, and cut into 1-inch wedges.
Make Glaze: Whisk olive oil, mustards, honey, garlic, rosemary, salt, pepper, and paprika in a bowl.
Coat: Toss potatoes in glaze until fully coated.
Roast: Spread on parchment-lined baking sheet. Bake at 425°F (220°C) for 35-40 mins, flipping halfway.
Finish: Optional: Drizzle extra glaze last 5 mins for caramelization.
