Ingredients
  

  • 2 cups cooked trout flaked
  • 1 cup breadcrumbs plus extra for coating
  • 1 large egg beaten
  • 1/4 cup mayonnaise
  • 1/4 cup green onions finely chopped
  • 2 tbsp parsley finely chopped
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

Instructions
 

  • In a large bowl, mix the flaked trout, breadcrumbs, beaten egg, mayonnaise, green onions, parsley, Dijon mustard, garlic powder, smoked paprika, salt, and pepper until well combined.Shape the mixture into 8 evenly sized patties. Add more breadcrumbs if the mixture feels too wet.Chill the patties in the fridge for 10 minutes to firm up.Lightly coat each patty in additional breadcrumbs for extra crispiness.Heat olive oil in a skillet over medium heat. Fry the patties for 3–4 minutes on each side, or until golden brown and heated through.Serve immediately with a side of your choice!

Notes

Substitute salmon or cod if trout isn’t available.To make ahead, form the patties and refrigerate them for up to 24 hours before frying.Uncooked patties can be frozen for up to 3 months. Thaw in the fridge before cooking.
