Ingredients
  

  • 2 cups frozen pineapple chunks
  • 1 cup full-fat coconut milk or light for fewer calories
  • 1 medium ripe banana fresh or frozen
  • ½ cup ice cubes
  • 1 tbsp honey or maple syrup optional
  • ½ tsp vanilla extract
  • 1 tbsp fresh lime juice

Instructions
 

  • Prep Ingredients: Add coconut milk, lime juice, and vanilla to the blender first.
  • Layer Soft Fruits: Add banana and fresh pineapple (if using).
  • Add Frozen Elements: Toss in frozen pineapple and ice.
  • Blend: Start on low, then gradually increase to high speed. Blend for 60 seconds until silky smooth.
  • Adjust: Too thick? Add 1 tbsp coconut milk at a time. Too thin? Add more frozen pineapple.
  • Serve Immediately in chilled glasses with pineapple wedges and toasted coconut flakes.

Notes

  • Boost It: Add 1 scoop vanilla protein powder or a handful of spinach.
  • Storage: Keep leftovers in an airtight container for up to 24 hours (stir before serving).
  • Lower-Calorie: Use light coconut milk or coconut water.
