Ingredients
  

Dry Ingredients:

  • 2 cups all-purpose flour or cake flour for a tender crumb
  • 2/3 cup unsweetened cocoa powder Dutch-processed preferred
  • 1 tbsp espresso powder optional, enhances chocolate flavor
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients:

  • 1/2 cup unsalted butter melted & slightly cooled
  • 1 cup granulated sugar or coconut sugar for deeper flavor
  • 2 large eggs room temperature
  • 1 tbsp vanilla extract
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup whole milk or almond/oat milk for dairy-free

Chocolate Additions:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup dark chocolate chunks
  • 1/3 cup white chocolate chips

Instructions
 

1️⃣ Preheat & Prepare:

  • Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with liners.
  • Position the rack in the middle for even baking.

2️⃣ Mix Dry Ingredients:

  • In a large bowl, whisk together flour, cocoa powder, espresso powder, baking powder, baking soda, and salt.
  • Make a well in the center for the wet ingredients.

3️⃣ Prepare Wet Ingredients:

  • In a separate bowl, whisk butter and sugar until combined.
  • Add eggs one at a time, then mix in vanilla, sour cream, and milk until smooth.
  • 4️⃣ Combine & Add Chocolate:
  • Pour wet ingredients into the dry and gently fold (10-12 strokes). Do not overmix!
  • Fold in ¾ cup semi-sweet chips, dark chocolate chunks, and ¼ cup white chocolate chips.

5️⃣ Fill & Bake:

  • Fill muffin cups ¾ full. Sprinkle the tops with remaining chocolate chips.
  • Place in oven and immediately reduce temp to 350°F (175°C).
  • Bake for 18-22 minutes, until a toothpick comes out with a few crumbs.

6️⃣ Cool & Enjoy:

  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For a bakery-style dome top: The temperature trick (starting at 375°F, then reducing to 350°F) ensures a perfect rise.
For extra moisture: Substitute ½ cup mashed banana or applesauce for part of the butter.
Storage: Keep in an airtight container at room temp for 3 days or freeze for up to 3 months.
