Ingredients
  

The Foundation:

  • 1 large head cauliflower about 2 lbs, cut into florets
  • 2 large eggs or 6 tbsp aquafaba for vegan option
  • 3 tbsp olive oil plus extra for drizzling

The Crispy Coating:

  • 1 cup freshly grated Parmesan cheese
  • ¾ cup panko breadcrumbs gluten-free if needed
  • ½ cup all-purpose flour or GF substitute

Flavor Enhancers:

  • 2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper optional for heat

Instructions
 

1️⃣ Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

    2️⃣ Prepare the cauliflower by washing, drying, and cutting it into even-sized florets.

      3️⃣ Set up a coating station:

      • Bowl 1: Mix flour, salt, and pepper.
      • Bowl 2: Whisk eggs with 1 tbsp olive oil.
      • Bowl 3: Combine Parmesan, panko, garlic powder, Italian seasoning, paprika, and cayenne.

      4️⃣ Coat the florets:

      • Dredge in the flour mixture, then dip in eggs, and finally coat in Parmesan-panko mix.

      5️⃣ Bake for 20-25 minutes, flipping halfway through, until golden and crispy.

        6️⃣ Serve immediately with your favorite dipping sauce. Enjoy! 😋

          Notes

          • Buffalo Version: Toss in buffalo sauce & bake for 5 extra minutes.
          • Mexican Style: Swap Italian seasoning for cumin & chili powder. Serve with guacamole.
          • Truffle Twist: Drizzle with truffle oil before serving.
          • Make it Vegan: Use aquafaba instead of eggs & nutritional yeast instead of Parmesan.
