For the Peach Puree:
- 4 large ripe peaches about 1.5 pounds
- 2 tablespoons fresh lemon juice
- 1-2 tablespoons honey or agave nectar optional
For the Lemonade Base:
- 1 cup freshly squeezed lemon juice about 6-8 lemons
- ¾ cup granulated sugar or ½ cup honey
- 5 cups cold water divided
- 1 lemon thinly sliced for garnish
- Ice cubes for serving
Optional Enhancers:
- Fresh mint or basil sprigs optional
- 1- inch piece of ginger peeled and sliced (optional)
- ¼ teaspoon vanilla extract optional
Prepare the Peach Puree:
Boil water in a large pot. Score an "X" on the bottom of each peach and blanch in boiling water for 30-45 seconds. Transfer peaches to an ice bath.
Once cool, peel off the skins, remove pits, and chop the peaches.
Blend peaches with 2 tbsp of lemon juice and honey (optional) until smooth. Optionally, strain the puree for a smoother texture.
Make the Lemonade Base:
In a small saucepan, dissolve sugar in 1 cup of water over medium heat, stirring until clear. Let cool.
Squeeze lemons to extract 1 cup of juice, strain out seeds and pulp.
In a large pitcher, combine simple syrup, lemon juice, and 4 cups of cold water. Stir well, taste, and adjust sweetness if necessary.
- You can customize the flavor with mint, basil, ginger, or even vanilla for extra richness.
- For a sparkling version, replace half the water with sparkling water.
- Add berries for a peach-berry twist or use frozen peaches off-season.
