Ingredients
  

Wet Ingredients:

  • 3 medium overripe bananas mashed
  • 1/2 cup creamy peanut butter
  • 1/3 cup unsalted butter melted
  • 3/4 cup packed brown sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/4 cup Greek yogurt or sour cream

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

Optional Mix-ins:

  • 1/2 cup chocolate chips chopped nuts, or a swirl of jam

Instructions
 

Preheat & Prepare

  • Preheat oven to 350°F (175°C).
  • Line a 9x5-inch loaf pan with parchment paper or grease and flour it.

Mix Wet Ingredients

  • In a large bowl, mash bananas until mostly smooth.
  • Stir in melted butter and peanut butter until fully combined.
  • Add brown sugar and mix until dissolved.
  • Beat in eggs one at a time, then stir in vanilla and Greek yogurt.

Incorporate Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  • Gradually fold dry ingredients into the wet mixture until just combined (avoid overmixing).
  • Fold in any mix-ins.
  • Bake the Bread
  • Pour batter into prepared loaf pan and smooth the top.
  • Bake for 55-65 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  • If the top browns too quickly, tent with foil at the 40-minute mark.

Cool & Serve

  • Let the bread cool in the pan for 15 minutes before transferring to a wire rack.
  • Slice and enjoy warm or at room temperature!

Notes

  • Storage: Keep in an airtight container at room temperature for up to 4 days or refrigerate for a week.
  • Freezing: Wrap slices individually in plastic wrap and freeze for up to 3 months.
