Potato Cheese Sticks

Potato Base
- 2 lbs russet potatoes or Yukon Gold
- 2 tbsp butter or plant-based butter
- 1/4 cup sour cream or Greek yogurt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
Cheese Filling
- 8 oz sharp cheddar cheese shredded
- 4 oz mozzarella cheese shredded
- 2 tbsp chives finely chopped
- 1 tbsp parsley finely chopped
Coating
- 1 cup all-purpose flour or GF flour blend
- 2 large eggs beaten (or flaxseed substitute)
- 2 cups panko breadcrumbs
- 1/2 cup grated parmesan or nutritional yeast
- 1 tbsp Italian seasoning
For Frying
- Vegetable oil canola, peanut, or avocado
Prepare the Potato Base
Peel, cube, and boil potatoes with salted water until fork-tender (15–20 min).
Drain, return to pot for 1–2 minutes to evaporate moisture.
Mash while hot, mix in butter, sour cream, garlic powder, onion powder, salt, and pepper.
Cool for 15–20 minutes until firm enough to handle.
Make Cheese Filling
Combine shredded cheddar, mozzarella, chives, and parsley in a bowl.
Chill if needed to firm up.
Form the Sticks
Flatten 1/4 cup of potato in your palm.
Add 1 tbsp cheese mix in the center, fold and seal.
Shape into sticks (4" x 1").
Chill shaped sticks for 20–30 minutes.
Coat & Cook
Set up breading station: flour, beaten eggs, panko/parmesan/seasoning mix.
Dredge in flour → dip in egg → coat in breadcrumb mix.
Fry at 350°F for 2–3 min until golden OR bake at 425°F for 20–25 min, flipping halfway.
Let rest 3–5 minutes before serving.
