Potato Cheese Sticks

Ingredients
  

Potato Base

  • 2 lbs russet potatoes or Yukon Gold
  • 2 tbsp butter or plant-based butter
  • 1/4 cup sour cream or Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Cheese Filling

  • 8 oz sharp cheddar cheese shredded
  • 4 oz mozzarella cheese shredded
  • 2 tbsp chives finely chopped
  • 1 tbsp parsley finely chopped

Coating

  • 1 cup all-purpose flour or GF flour blend
  • 2 large eggs beaten (or flaxseed substitute)
  • 2 cups panko breadcrumbs
  • 1/2 cup grated parmesan or nutritional yeast
  • 1 tbsp Italian seasoning

For Frying

  • Vegetable oil canola, peanut, or avocado

Instructions
 

Prepare the Potato Base

  • Peel, cube, and boil potatoes with salted water until fork-tender (15–20 min).
  • Drain, return to pot for 1–2 minutes to evaporate moisture.
  • Mash while hot, mix in butter, sour cream, garlic powder, onion powder, salt, and pepper.
  • Cool for 15–20 minutes until firm enough to handle.

Make Cheese Filling

  • Combine shredded cheddar, mozzarella, chives, and parsley in a bowl.
  • Chill if needed to firm up.

Form the Sticks

  • Flatten 1/4 cup of potato in your palm.
  • Add 1 tbsp cheese mix in the center, fold and seal.
  • Shape into sticks (4" x 1").
  • Chill shaped sticks for 20–30 minutes.

Coat & Cook

  • Set up breading station: flour, beaten eggs, panko/parmesan/seasoning mix.
  • Dredge in flour → dip in egg → coat in breadcrumb mix.
  • Fry at 350°F for 2–3 min until golden OR bake at 425°F for 20–25 min, flipping halfway.
  • Let rest 3–5 minutes before serving.

Notes

  • Meal Prep: You can shape and refrigerate them up to 24 hours in advance.
  • Storage: Freeze before or after frying; reheat in oven at 400°F.

  • Dipping ideas: Ketchup, sour cream, spicy mayo, truffle aioli, or garlic yogurt sauce.
  • Make it Vegan: Use plant-based butter, vegan cheese, flaxseed “egg,” and nutritional yeast.
