For the Cream Cheese Layer

  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream whipped to stiff peaks

For the Raspberry Layer

  • 2 cups fresh raspberries divided
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • ½ cup water

For the Chocolate Layer

  • 1 cup heavy cream
  • 2 tablespoons unsalted butter

For Garnish

  • 1 cup fresh raspberries
  • ¼ cup dark chocolate shavings
  • Fresh mint leaves optional

Instructions
 

Step 1: Prepare the Cookie Crust

  • Mix cookie crumbs, melted butter, and sugar in a bowl until combined.
  • Press firmly into a 9x13-inch dish and refrigerate for 30 minutes.

Step 2: Make the Cream Cheese Layer

  • Beat softened cream cheese until smooth.
  • Add powdered sugar and vanilla, mixing until incorporated.
  • Fold in whipped cream and spread over the crust. Refrigerate.

Step 3: Prepare the Raspberry Layer

  • In a saucepan, combine 1½ cups raspberries, sugar, lemon juice, cornstarch, and water.
  • Cook over medium heat, stirring, until thickened (5-7 minutes).
  • Cool completely before folding in the remaining raspberries.
  • Spread over the cream cheese layer and refrigerate for 30 minutes.

Step 4: Make the Chocolate Layer

  • Heat heavy cream until simmering, then pour over chocolate chips.
  • Let sit for 2 minutes, then whisk until smooth.
  • Add butter, mix until glossy, and let cool slightly.
  • Pour over the raspberry layer evenly.

Step 5: Garnish and Set

  • Arrange fresh raspberries on top and sprinkle with chocolate shavings.
  • Refrigerate for at least 4 hours (overnight preferred).

  • For a gluten-free version: Use gluten-free chocolate cookies.
  • For a dairy-free version: Substitute plant-based cream cheese, coconut cream, and dairy-free chocolate.
