Ingredients
  

  • 1 cup fresh raspberries or 1/4 cup raspberry syrup
  • 4-6 key limes about 1/4 cup juice
  • 1/2 cup granulated sugar for simple syrup, if making from scratch
  • 1/2 cup water for simple syrup
  • 2 cups club soda or sparkling water
  • Ice cubes
  • 2 tablespoons half-and-half or heavy cream optional

Instructions
 

Make the Raspberry Syrup (if not using store-bought):

  • Combine 1 cup raspberries, 1/2 cup sugar, and 1/2 cup water in a saucepan.
  • Simmer for 10 minutes, then strain through a fine mesh sieve. Let cool.

Prepare Key Lime Juice:

  • Roll key limes on the counter to release juices, then cut and juice them. Strain to remove seeds.

Assemble the Italian Soda:

  • Fill tall glasses 2/3 full with ice.
  • Add 2-3 tablespoons raspberry syrup to each glass.
  • Add 1-2 tablespoons key lime juice.
  • Slowly pour 1 cup club soda into each glass.
  • For a creamy version, gently pour 1 tablespoon half-and-half over the back of a spoon into each glass.

Garnish and Serve:

  • Add fresh raspberries, a lime wheel, or a sprig of mint for garnish.
  • Serve immediately with a straw or stir gently before drinking.

Notes

  • Use frozen raspberries if fresh aren't available.
  • Substitute regular limes if key limes are hard to find.
  • For a healthier version, use honey or agave instead of sugar.
  • Store leftover syrup in a sealed container in the fridge for up to 2 weeks.
