Ingredients
  

  • 2.5 lbs beef chuck roast cubed
  • 4 cups beef broth low-sodium
  • 1 yellow onion diced
  • 3 garlic cloves minced
  • 8 oz mushrooms sliced (optional)
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • 12 oz wide egg noodles
  • ½ cup sour cream
  • Salt + pepper to taste

Instructions
 

  • Brown Beef (optional): Sear cubes in skillet over high heat 2 mins/side.
  • Slow Cook: Add beef, broth, onion, garlic, mushrooms, Worcestershire, tomato paste, thyme, and bay leaf to cooker.
  • Cook: Low 8 hrs / High 4 hrs. Discard bay leaf.
  • Add Noodles: Stir in egg noodles. Cook 30 mins on High (or until tender).
  • Finish: Stir in sour cream. Season with salt/pepper.

Notes

  • Gluten-Free: Use GF egg noodles + tamari instead of Worcestershire
  • Vegetarian: Swap beef for portobello mushrooms + veggie broth
  • Freeze: Store cooled portions in freezer bags up to 3 months
  • Thicken Gravy: Mix 2 tbsp cornstarch + ¼ cup broth, stir in last 30 mins
