- 2.5 lbs beef chuck roast cubed
- 4 cups beef broth low-sodium
- 1 yellow onion diced
- 3 garlic cloves minced
- 8 oz mushrooms sliced (optional)
- 2 tbsp Worcestershire sauce
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- 12 oz wide egg noodles
- ½ cup sour cream
- Salt + pepper to taste
Brown Beef (optional): Sear cubes in skillet over high heat 2 mins/side.
Slow Cook: Add beef, broth, onion, garlic, mushrooms, Worcestershire, tomato paste, thyme, and bay leaf to cooker.
Cook: Low 8 hrs / High 4 hrs. Discard bay leaf.
Add Noodles: Stir in egg noodles. Cook 30 mins on High (or until tender).
Finish: Stir in sour cream. Season with salt/pepper.
