Ingredients
  

For the Graham Cracker Crust:

  • cups graham cracker crumbs about 10 full graham cracker sheets
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon optional
  • 7 tablespoons unsalted butter melted
  • Pinch of salt

For the Chocolate Filling:

  • 8 ounces semi-sweet chocolate chopped
  • 1 cup heavy cream
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Marshmallow Topping:

  • 4 cups mini marshmallows

Instructions
 

Prepare the Graham Cracker Crust:

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine graham cracker crumbs, sugar, cinnamon (if using), and salt.
  • Stir in melted butter until the mixture resembles wet sand.
  • Press the mixture firmly into a 9-inch pie dish, covering the bottom and sides evenly.
  • Bake for 8-10 minutes until lightly golden. Let cool completely.

Create the Chocolate Filling:

  • Reduce oven temperature to 325°F (165°C).
  • Place chopped chocolate in a heatproof bowl.
  • In a saucepan, heat heavy cream until it simmers. Pour over chocolate and let sit for 2-3 minutes.
  • Whisk until smooth.
  • In another bowl, whisk eggs, then slowly incorporate into the chocolate mixture.
  • Stir in vanilla extract and salt.

Assemble and Bake:

  • Pour chocolate filling into the cooled crust.
  • Bake for 25-30 minutes, until the filling is set but slightly jiggly in the center.
  • Cool to room temperature, then refrigerate for at least 1 hour.

Add the Marshmallow Topping:

  • Preheat the broiler.
  • Arrange mini marshmallows over the chilled pie.
  • Broil for 1-2 minutes until golden brown, watching closely to prevent burning. Alternatively, use a kitchen torch to toast the marshmallows evenly.

Notes

  • For a homemade touch, consider making a marshmallow meringue topping instead of using store-bought marshmallows.
  • Ensure the pie is well-chilled before adding the marshmallow topping to maintain distinct layers.
