For the Graham Cracker Crust:

- ¼ cup granulated sugar
- ½ teaspoon ground cinnamon optional
- 7 tablespoons unsalted butter melted

For the Chocolate Filling:
- 8 ounces semi-sweet chocolate chopped
- 1 cup heavy cream
- 2 large eggs room temperature
- 1 teaspoon vanilla extract
- Pinch of salt
For the Marshmallow Topping:
Prepare the Graham Cracker Crust:
Preheat your oven to 350°F (175°C).
In a medium bowl, combine graham cracker crumbs, sugar, cinnamon (if using), and salt.
Stir in melted butter until the mixture resembles wet sand.
Press the mixture firmly into a 9-inch pie dish, covering the bottom and sides evenly.
Bake for 8-10 minutes until lightly golden. Let cool completely.
Create the Chocolate Filling:
Reduce oven temperature to 325°F (165°C).
Place chopped chocolate in a heatproof bowl.
In a saucepan, heat heavy cream until it simmers. Pour over chocolate and let sit for 2-3 minutes.
Whisk until smooth.
In another bowl, whisk eggs, then slowly incorporate into the chocolate mixture.
Stir in vanilla extract and salt.
Assemble and Bake:
Pour chocolate filling into the cooled crust.
Bake for 25-30 minutes, until the filling is set but slightly jiggly in the center.
Cool to room temperature, then refrigerate for at least 1 hour.
Add the Marshmallow Topping:
Preheat the broiler.
Arrange mini marshmallows over the chilled pie.
Broil for 1-2 minutes until golden brown, watching closely to prevent burning. Alternatively, use a kitchen torch to toast the marshmallows evenly.
