Ingredients
  

  • 1 pound fresh strawberries hulled and halved
  • 2 cups heavy whipping cream chilled
  • 1/2 cup granulated sugar divided
  • 1 tablespoon unflavored gelatin powder
  • 3 tablespoons cold water
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon fresh lemon juice
  • Pinch of salt

Instructions
 

Prepare the Strawberries:

  • Puree strawberries in a food processor or blender until smooth. Strain through a fine-mesh sieve to remove seeds. Set aside.

Bloom the Gelatin:

  • Sprinkle gelatin over 3 tablespoons of cold water in a small bowl. Let it bloom for 5 minutes.

Dissolve the Gelatin:

  • Heat the bloomed gelatin gently in a small saucepan until fully dissolved. Cool to room temperature.

Whip the Cream:

  • In a chilled bowl, whip the heavy cream with 1/4 cup sugar until medium-firm peaks form.

Combine Ingredients:

  • Mix the strawberry puree with the remaining 1/4 cup sugar, lemon juice, vanilla, and salt.
  • Gently fold the cooled gelatin mixture into the strawberry puree.
  • Carefully fold the strawberry mixture into the whipped cream until fully combined.

Chill and Serve:

  • Spoon the mousse into serving glasses or ramekins.
  • Chill for at least 4 hours, or overnight, until set.
  • Garnish with fresh strawberries or whipped cream before serving.

Notes

  • For a richer flavor, add 1/4 cup melted white chocolate to the strawberry puree.
  • Substitute frozen strawberries if fresh aren't available (thaw and drain first).
  • For a vegan version, use coconut cream and agar-agar instead of gelatin.
