For the Seasoned Beef

  • 1 lb ground beef 80/20 recommended
  • 2 tbsp all-purpose flour or cornstarch for gluten-free
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika or smoked paprika for extra flavor
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp dried oregano
  • ¼ tsp salt or to taste
  • ¼ tsp black pepper
  • ¾ cup water

For the Burrito Assembly

  • 4 large flour tortillas 10-inch
  • 1 cup shredded Mexican cheese blend
  • ½ cup nacho cheese sauce
  • ½ cup sour cream or Greek yogurt
  • ½ cup cooked rice seasoned with lime & cilantro
  • ¼ cup pico de gallo

Instructions
 

1️⃣ Prepare the Seasoned Beef

  • In a small bowl, mix flour, chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
  • Heat a large skillet over medium-high heat. Add ground beef and break it apart while cooking. Cook for 5-7 minutes, until browned.
  • Drain excess grease (leave about 1 tbsp in the pan for flavor).
  • Lower heat to medium and sprinkle the seasoning mix over the beef. Stir constantly for 30 seconds.
  • Add ¾ cup water and stir. Let simmer for 4-5 minutes until thickened. Turn off heat and let rest for 2 minutes.

2️⃣ Assemble the Burritos

  • Warm tortillas in a microwave for 10-15 seconds or on a dry skillet for 10 seconds per side.
  • Spread 2 tbsp nacho cheese sauce in the center of each tortilla.
  • Layer with:
  • ¼ cup seasoned rice
  • ⅓ cup seasoned beef
  • ¼ cup shredded cheese
  • 2 tbsp sour cream
  • 1 tbsp pico de gallo
  • Fold the sides in, then roll tightly into a burrito shape.

3️⃣ Toast the Burritos

  • Place seam-side down on a dry skillet over medium heat.
  • Toast for 1-2 minutes per side, until golden and slightly crisp.

4️⃣ Serve & Enjoy!

  • Let rest for 1 minute, then slice in half and enjoy! 🌯
